Ingredients:
1 tsp finely chopped peeled ginger
1 garlic clove, crushed
Grated zest of 1 lime
Juice of 2 limes
1 tbs vegetable oil
1 pound carrots
2 tbs chopped fresh cilantro
1/2 tsp salt
Steps:
- Mix garlic with ginger, lime zest, and lime juice.
- Whisk in the vegetable oil.
- Shave the carrots into ribbons with a vegetable peeler and toss with the dressing.
- Add the cilantro and salt and toss.
